About Elephant Garlic

Cuisine
Elephant garlic is the mildest of the garlic varieties. The large cloves
are easy to peel and are excellent for all garlic recipes including roasting,
stews, slicing raw into salads and don't forget "garlic mashed potatoes."
Remedies
In folk medicine, garlic is utilized internally for arteriosclerosis,
high blood pressure, colds, coughs, whooping cough and bronchitis. Garlic
also is used for gastronintestinal ailments, partiuclarly for digestive
disorders with bloating and convulsive pain. For other uses see "Allium
Sativum" Garlic, in the "PDR for Herbal Medicines," by
Medical Economics Company, Montvale, New Jersey, ISBN: I-56363-292-6.
Terroir
The Climate of the Smoky Mountains in North Georgia is the most optimum
in the nation for growing Elephant Garlic. The rich soil and good weather
conditions are wonderful for growing premier produce. Many of the larger
bulbs weigh in at over one pound.
